Spooktacular Chocolate Covered Peanut Butter Treats

- 1 ⅔ cups (16 jar) extra crunchy peanut butter (See Tips 1 and 2)
- ½ cup (8 ounces, 1 stick) unsalted butter, room temperature
- 3 ½ cups (14 ounces) confectioners' sugar
- 3 cups chocolate coating wafers (See Tip 3)
Beat peanut butter and butter in a medium bowl with an electric mixer until smooth. Add confectioners' sugar. Beat on low until all ingredients are combined. The mixture will be crumbly.
Melt a cup of chocolate wafers in a disposable pastry bag in 1-minute intervals on 50% power. Snip the end of the pastry bag; pipe some chocolate into the mold cavities. Using a small brush, brush the chocolate up the sides to completely cover the cavity. Let harden. Press some peanut butter mixture into the chocolate-lined cavity, not quite to the top—pipe additional chocolate on the peanut butter mixture. Spread chocolate using a small brush, ensuring all edges are completely covered. Let harden.
Remove the candy from the molds. Store it in an airtight container at room temperature for up to a week.
Yield: 60 pieces of candy
- I used Jif Extra Crunchy peanut butter. You could also use creamy peanut butter.
- You can purchase the peanut butter in 16-ounce jars, so use a whole 16-ounce jar for this recipe.
- I like securing the pastry bag with a rubber band to keep the melted chocolate from oozing out.
