- 2 c Vanilla Greek Yogurt
- ¼ c Honey
- 1 tsp Vanilla Extract
- 1 c Sliced Strawberries approx. 7 oz
- 1 c Fresh Raspberries approx. 5 oz
- 1 c Fresh Blueberries approx. 3.5 oz
- 1 c Fresh Blackberries approx. 5 oz
- 2 c Granola
Gently wash the berries and place on layers of paper towels to dry. Cut the tops off the strawberries, then cut them into slices, and place the slices on paper towels to absorb the excess moisture.
Place the vanilla Greek yogurt, honey, and vanilla extract in a medium size bowl. Then, use an electric hand mixer to combine. Cover the bowl and place in the refrigerator for an hour or so to chill.
To build the parfaits, start by adding ¼ cup of granola to the bottom of a mini trifle bowl.
Then, using an ice cream scoop, add ¼ cup of the yogurt mixture.
Next, add ½ cup of mixed sliced strawberries, blueberries, raspberries, and blackberries.
Then, add another ¼ cup of granola on top of the berries.
Next, using an ice cream scoop, add another ¼ cup of the yogurt mixture on top of the granola.
Then, add another ½ cup of mixed sliced strawberries, blueberries, raspberries, and blackberries. Garnish with some shredded coconut and a few almonds, if you like.
Repeat steps 3 through 8 to build three more Yogurt Berry Parfaits.
