Ingredients

For the Bottom Layer

  • 1 15.25 oz box Yellow Cake Mix
  • 1 Egg, room temperature
  • ½ c Unsalted Butter, room temperature

For the Second Layer

  • 8 oz Cream Cheese, room temperature
  • ¼ c Unsalted Butter, room temperature
  • 2 Eggs, room temperature
  • 1 tbs Vanilla Extract
  • 1 lb Powdered Sugar
  • 6 oz Mini Semi-Sweet Chocolate Chips
  • 6 oz Heath English Toffee Bits with Chocolate

For Serving

  • Vanilla Ice Cream
  • Chocolate Sauce
  • Caramel Sauce
  • Mini Semi-Sweet Chocolate Chips
  • Heath English Toffee Bits with Chocolate

Instructions

To Make the Bottom Layer

  • Preheat oven to 350°F.
  • Place ½ cup room temperature unsalted butter in a large bowl and beat slightly using an electric hand mixer.
  • Then add the box of yellow cake mix and one egg.
  • Begin beating on low. As the mixture comes together, increase the speed to medium until it forms a solid dough.
  • Spray a 9x13 baking dish with Baker's Joy Nonstick Cooking Spray with Flour. Put on a pair of vinyl gloves and press the dough in the bottom of the pan, making sure to cover the entire bottom. Set the dish aside while you prepare the second layer.

To Make the Second Layer

  • Place the room-temperature cream cheese and ¼ cup unsalted butter in a large bowl and beat together until just combined.
  • Add two eggs and vanilla extract, then beat until well combined.
  • Then, add the powdered sugar, about a cup at a time, beating well after each addition, until all of it has been added.
  • Add the mini semi-sweet chocolate chips and Heath English Toffee Bits with Chocolate. Then, using a large rubber spatula, fold them into the batter.
  • Pour the batter over the dough in the baking pan and spread it with the spatula to cover the entire dough.

To Finish the Ooey Gooey Toffee Cake

  • Bake for 40 minutes in the 350°F oven.
  • Remove the crust from the oven and place crinkled aluminum foil around the inside of the pan, covering the browned, puffy edges. Then bake for an additional 10 minutes.
  • Remove from the oven and place on a wire cooling rack. Then, carefully remove the foil from the pan and discard. Allow to cool for several hours before serving.
  • To serve: Cut into individual pieces and top with a scoop of vanilla ice cream, a drizzle of chocolate and caramel sauces, and a sprinkle of mini chocolate chips and Heath English Toffee Bits.
