- 2 ½ cups can pineapple chunks with pineapple juice (See Tip 1)
- ¾ cup vanilla ice cream
Drain pineapple juice from the pineapple chunks. Reserve ½ cup of the pineapple juice for the Dole Whip and use the remainder for another purpose.
Spread the pineapple chunks in a single layer on a parchment-lined sheet pan; freeze the pineapple chunks.
Add the frozen pineapple chunks, ½ cup of the pineapple juice, and ice cream to a blender. Secure the top and blend at high speed until the mixture is no longer blending because it's too frozen, about 5 seconds. Scrape down the sides of the blender, and let the mixture thaw until it blends freely about 30 minutes. Once the mixture blends freely, blend at high speed for two minutes or until no pineapple bits remain.
Transfer to a freezer-safe container, and freeze for 30 to 40 minutes or until the mixture is pipable. (See Tip 2)
Transfer the mixture to a piping bag fitted with a 1M star tip. Pipe mixture into serving containers.
Yield: 2 servings.
- Rather than using canned pineapple chunks in juice, you can use 2 cups of frozen pineapple and ½ cup of pineapple juice.
- As the mixture freezes, ice crystals will likely form around the bowl's perimeter. Therefore, every 10 to 15 minutes, remove the mixture from the freezer and stir it to minimize the formation of the ice crystals. The reason is that the ice crystals may clog the piping tip, making the piping of the Dole Whip difficult.
