Equipment

  • Blender
  • Glass pitcher (at least quart capacity)

Ingredients

  • 1 cup fresh strawberries, hulled and sliced (See Tip 1)
  • ¾ cup fresh lemon juice
  • ¾ cup simple syrup (See Tip 2)
  • 1 ½ cups ice cubes
  • 1 ½ cups sparkling water (See Tip 3)
  • Lemon slices and sliced strawberries for garnish (optional)

Instructions

  • Add strawberries, lemon juice, and simple syrup to the blender. Secure the top and purée for 30 seconds.
  • Transfer the strawberry-lemon mixture to a wire mesh strainer set over a large measuring cup. Use a spoon to force the liquid into the measuring cup, leaving any strawberry bits behind. (See Tip 4)
  • Add ice cubes, strawberry-lemon mixture, and sparkling water to a glass pitcher. If desired, add lemon slices and sliced strawberries; stir to combine. (See Tip 5)
  • Serve in glasses with ice; garnish with additional lemon slices and sliced strawberries.
  • Yield: 4 servings.

Notes

  1. May substitute thawed frozen strawberries for the fresh strawberries. Just make sure the strawberries are totally thawed before adding them to the blender.
  2. You can purchase simple syrup. However, it's super easy to make. Heat ½ cup of granulated sugar and ½ cup of water in a saucepan over medium heat until the sugar is totally dissolved. That's it!
  3. Instead of sparkling water, you can use club soda.
  4. The strawberry-lemon mixture can be made in advance and refrigerated for up to three days.
  5. It's best to add the sparkling water right before serving to maintain the bubbles.
