- 10 ounce can Rotel Original Diced Tomatoes & Green Chilies
- 16 ounces low-fat cottage cheese (See Tip 1)
- 1 Tablespoon taco seasoning (See Tip 2)
- 1 Tablespoon Ranch seasoning (See Tip 2)
- 2 cups (8 ounces) low-fat fiesta blend shredded cheese (See Tip 3)
Drain the Rotel tomatoes in a wire mesh strainer, reserving the liquid.
Add the cottage cheese, taco seasoning, Ranch seasoning, and reserved Rotel liquid to the food processor with a steel blade. Pulse five times to combine; scrape down the sides. Process for another 30 seconds until smooth and creamy.
Add the drained Rotel tomatoes and shredded cheese. Pulse five times to combine.
Transfer to a serving dish. If desired, garnish with diced tomatoes and minced parsley. Serve with tortilla chips, potato chips, crackers, veggies, etc.

- May substitute no-fat cottage cheese or 4% cottage cheese for low-fat cottge cheese.
- May omit the Ranch seasoning and double the amount of taco seasoning. Alternatively, you may omit the taco seasoning and double the amount of Ranch seasoning.
- I used pre-shredded cheese in this recipe. Because the cheese is not melted, the pre-shredded cheese works fine. Also, you can substitute the cheese of your choice.
- This dip will last for three days if stored in an airtight container and refrigerated.
