Irish Nachos
Irish Nachos are the perfect appetizer for St. Patrick's Day. Kettle potato chips are loaded with two cheeses, bacon, tomatoes, sour cream, and green onions.

- 5 cups (5 ounces) kettle potato chips
- ¾ cup (3 ounces) shredded Dubliner cheese (See Note 1)
- ¾ cup (3 ounces) shredded Cheddar cheese
- ¼ cup crumbled bacon (See Note 2)
- 1 small tomato, cored, seeded, and diced, about ¼ cup
- ⅓ cup light sour cream
- 2 green onions, tops only sliced
Preheat oven to 375° F.
Spread potato chips in an oven safe container. Sprinkle with cheeses. Bake in preheated oven for 10 minutes, or until cheeses have melted and are bubbly.
Remove from oven. Sprinkle on crumbled bacon and diced tomatoes. Top with sour cream. Finish with a sprinkling of green onions.
Yield: 6 servings.
- May use 1 ½ cups of cheddar cheese in place of ¾ cup of Dubliner cheese and ¾ cup of cheddar cheese.
- I used 8 slices of bacon to produce ¼ cup of crumbled bacon.
