Reuben Waffle Fries Nachos

Equipment

Ingredients

  • 20 oz Frozen Seasoned Waffle Fries
  • 1 c Sauerkraut1 drained, rinsed, and dried on paper towels
  • 8 oz Deli Corned Beef2 shaved and chopped
  • 8 oz Swiss Cheese freshly shredded
  • ¼ c Thousand Island Dressing

Instructions

  • Prepare waffle fries according to package directions.3
  • After the fries are cooked, reduce the oven temperature to 375°F. Line the bottom and sides of a 9-inch oven-safe skillet with a little more than half of the fries.
  • Sprinkle half a cup of sauerkraut over the fries, followed by four ounces of corned beef and four ounces of Swiss cheese.
  • Layer the remaining waffle fries over the Swiss cheese. Then, top with the remaining sauerkraut, corned beef, and Swiss cheese.
  • Bake in a 375°F oven for 25 minutes, until the cheese is golden bubbly. Remove from the oven and top with Thousand Island dressing. Serve warm.
  • Yield 6 servings

Notes

  1. Drain the sauerkraut thoroughly in a colander, then give it a good rinse! Excess moisture will make the nachos soggy, so spread it out on several layers of paper towels to let it dry. Then, squeeze it dry with more paper towels to get it as dry as possible.
  2. When purchasing the corned beef, ask for it to be shaved. Then, before using it give it a quick chop with a large kitchen knife.
  3. For the ones I used, I preheated the oven to 425°F, placed the frozen waffle fries on a half sheet pan and baked them for 34 minutes, flipping them over halfway through baking.
