Ingredients – Here’s What You’ll Need
Steps to Make Reuben Waffle Fries Nachos
- Prepare waffle fries according to the package directions. For the ones I used, I preheated the oven to 425°F, placed the frozen waffle fries on a half-sheet pan, and baked them for 34 minutes, flipping them over halfway through baking.
- After the fries are cooked, reduce the oven temperature to 375°F. Add a little more than half of the fries to the bottom and sides of a 9-inch skillet.
- Sprinkle half a cup of sauerkraut that has been well drained, rinsed, and dried over the fries.
- Then, sprinkle four ounces of shaved and chopped deli corned beef over the sauerkraut.
- Next, sprinkle four ounces of freshly shredded Swiss cheese over the corned beef.
- Layer the remaining waffle fries over the Swiss cheese.
- Sprinkle the remaining sauerkraut over the second layer of waffle fries.
- Next, sprinkle the remaining corned beef over the sauerkraut.
- Then, top with the remaining Swiss cheese. Bake in a 375°F oven for 25 minutes, until the cheese is golden bubbly.
- Remove from the oven and top with Thousand Island dressing. Serve warm.

Recipe Tips and Tricks
- Follow the package directions for your waffle fries, but consider adding a few extra minutes to ensure they’re extra crispy. A crispy base is essential for holding up to the toppings. For even crispier fries, consider using an air fryer.
- Using a cast iron skillet is ideal for even heat distribution and presentation. However, these can be made in a single layer. Simply sprinkle the sauerkraut, corned beef, and Swiss cheese on top of the waffle fries as soon as you pull the pan out of the oven. Then, return the pan to the oven to melt the cheese.
- When purchasing the corned beef, ask for it to be shaved. Then, before using it give it a quick chop with a large kitchen knife.
- Drain the sauerkraut thoroughly in a colander, then give it a good rinse! Excess moisture will make the nachos soggy, so spread it out on several layers of paper towels to let it dry. Then, squeeze it dry with more paper towels to get it as dry as possible.
