Equipment

  • 10-inch Cast Iron Pan

Ingredients

  • 1 pound (16 ounces) pizza dough, homemade or store-bought
  • 1 ½ teaspoons olive oil
  • 8 ounces cream cheese (See Tip 1)
  • ½ cup (4 ounces) sour cream (See Tip 2)
  • 3 cloves fresh garlic, minced, divided
  • 1 cup (4 ounces) shredded mozzarella cheese (See Tip 3)
  • ½ cup (2 ounces) freshly grated Parmesan cheese, reserving 1 tablespoon for sprinkling on the rolls
  • 1 ½ teaspoons Italian seasoning, divided
  • ¼ cup (2 ounces) unsalted butter
  • ¼ teaspoon salt
  • 1 Tablespoon fresh basil, cut into strips

Instructions

  • Cut pizza dough into equal size pieces; roll each piece into a tight ball. (See Tip 4)
  • Brush the cast iron pan with 1 ½ teaspoons of olive oil. Place the pizza dough balls around the outer edge of the pan. Cover the pan with a dish towel and place in a warm location until the dough has doubled in size, around 45 minutes. (See Tip 5)
  • While the dough is rising, make the pizza dip by beating together the cream cheese, sour cream, 2 cloves of minced garlic, mozzarella cheese, Parmesan cheese less 1 tablespoon reserved for later, and 1 teaspoon of Italian seasoning.
  • Preheat oven to 400°F
  • When the dough has doubled in size, spoon the pizza dip into the center of the bread ring. Bake in a preheated 400°F oven for 20 minutes or until the rolls are golden brown.
  • While the dip is baking, add the unsalted butter, 1 clove of minced garlic, ½ teaspoon of Italian seasoning, and salt to a microwave-safe bowl. Microwave until the butter is melted, about 30 seconds. Stir to combine.
  • When the pizza dip is ready, remove it from the oven. Brush the rolls with garlic butter. Sprinkle fresh basil strips over the pizza dip and sprinkle the reserved one tablespoon of Parmesan cheese on the rolls.
  • Serve with pasta chips on the side (optional).
  • Yield: 12 servings.

Notes

  1. I used reduced-fat cream cheese, but you could also use regular cream cheese.
  2. I used light sour cream, but you can use regular sour ream.
  3. I would avoid preshredded mozzarella cheeese which contains an additive that can interfere with the melting.
  4. If you use one pound of pizza dough, cut each piece into 1.33 ounces. I used my homemade pizza dough that weighed 17.4 ounces, and cut each piece into 1.45 ounces.
  5. My electric oven has a proof feature which I used. If your oven doesn't have a proof feature, use Julia Child's recommendation - turn the electric oven on for exactly 1 minute and 45 seconds to warm the interior, then turn the oven off.
