    Ingredients - Here's What You'll Need

Ingredients for three cheese pizza dip.
    • The Rolls: I used homemade pizza dough, but you could also use store-bought pizza dough. I brushed the cast iron skillet with olive oil before adding the rolls.
    • The White Pizza Dip: For the White Pizza Dip, I used cream cheese, sour cream, mozzarella cheese, Parmesan cheese, minced garlic, and Italian seasoning.
    • For Brushing the Rolls: I made a simple garlic butter to brush on the rolls using unsalted butter, minced garlic, Italian seasoning, and salt

Making the Three Cheese White Pizza Dip with Pull-Apart Rolls

    1. I started by cutting the pizza dough into equal size pieces and then rolling each piece into a tight ball.

    1. Next, I brushed my 10-inch cast iron skillet with olive oil and placed the dough balls around the outer edge of the pan. I covered the pan with a dish towel and placed it in my electric oven on the proof setting to allow the dough to rise.

    1. While the rolls were rising, I made the three cheese white pizza dip. I added the cream cheese, sour cream, minced garlic, shredded mozzarella cheese, grated Parmesan cheese, and Italian seasoning to a medium bowl.
Adding Italian Seasoning to the other ingredients for the white pizza dip.
    1. Then, I used my electric mixer to beat the pizza dip ingredients together.

    1. After about 45 minutes, the rolls had risen nicely. I spooned the dip into the center of the bread ring and smoothed out the top.

I baked the pizza dip in a preheated 400°F oven for 20 minutes.

    1. While the dip was baking, I made the garlic butter. I added unsalted butter, minced garlic, Italian seasoning, and salt to a microwave safe measuring cup. I microwaved the ingredients for about 30 seconds until the butter was melted, and stirred everything together to combine.
Adding salt to the other ingredienets for the garlic butter.
    1. After 20 minutes, the dip was bubbly and the rolls were golden brown. I removed the dip from the oven, and brushed the rolls with the garlic butter.

    1. To finish the three cheese white pizza dip, I sprinkled on some fresh basil strips, and sprinkled the rolls with some freshly grated Parmesan cheese.

    Frequently Asked Questions

Can pre-shredded cheese be used in this recipe?

Pre-shredded cheese contains a coating that can sometimes inhibit its melting. Therefore, it's best to shred your own cheese.

Can low-fat sour cream be used?

I used low-fat sour cream in this recipe. It worked fine.

Could ricotta cheese be substituted for the sour cream?

Feel free to substitute ricotta cheese. I would, however, recommend that you use homemade ricotta cheese for the best flavor and texture.

Can this be made in something other than a cast iron pan?

You can make this in a 10-inch quiche dish or a 10-inch braiser

    Equipment

    • 10-inch Cast Iron Pan

    Ingredients

    • 1 pound (16 ounces) pizza dough, homemade or store-bought
    • 1 ½ teaspoons olive oil
    • 8 ounces cream cheese (See Tip 1)
    • ½ cup (4 ounces) sour cream (See Tip 2)
    • 3 cloves fresh garlic, minced, divided
    • 1 cup (4 ounces) shredded mozzarella cheese (See Tip 3)
    • ½ cup (2 ounces) freshly grated Parmesan cheese, reserving 1 tablespoon for sprinkling on the rolls
    • 1 ½ teaspoons Italian seasoning, divided
    • ¼ cup (2 ounces) unsalted butter
    • ¼ teaspoon salt
    • 1 Tablespoon fresh basil, cut into strips

    Instructions

    • Cut pizza dough into equal size pieces; roll each piece into a tight ball. (See Tip 4)
    • Brush the cast iron pan with 1 ½ teaspoons of olive oil. Place the pizza dough balls around the outer edge of the pan. Cover the pan with a dish towel and place in a warm location until the dough has doubled in size, around 45 minutes. (See Tip 5)
    • While the dough is rising, make the pizza dip by beating together the cream cheese, sour cream, 2 cloves of minced garlic, mozzarella cheese, Parmesan cheese less 1 tablespoon reserved for later, and 1 teaspoon of Italian seasoning.
    • Preheat oven to 400°F
    • When the dough has doubled in size, spoon the pizza dip into the center of the bread ring. Bake in a preheated 400°F oven for 20 minutes or until the rolls are golden brown.
    • While the dip is baking, add the unsalted butter, 1 clove of minced garlic, ½ teaspoon of Italian seasoning, and salt to a microwave-safe bowl. Microwave until the butter is melted, about 30 seconds. Stir to combine.
    • When the pizza dip is ready, remove it from the oven. Brush the rolls with garlic butter. Sprinkle fresh basil strips over the pizza dip and sprinkle the reserved one tablespoon of Parmesan cheese on the rolls.
    • Serve with pasta chips on the side (optional).
    • Yield: 12 servings.

    Tips/Notes

    1. I used reduced-fat cream cheese, but you could also use regular cream cheese.
    2. I used light sour cream, but you can use regular sour ream.
    3. I would avoid preshredded mozzarella cheeese which contains an additive that can interfere with the melting.
    4. If you use one pound of pizza dough, cut each piece into 1.33 ounces. I used my homemade pizza dough that weighed 17.4 ounces, and cut each piece into 1.45 ounces.
    5. My electric oven has a proof feature which I used. If your oven doesn't have a proof feature, use Julia Child's recommendation - turn the electric oven on for exactly 1 minute and 45 seconds to warm the interior, then turn the oven off.
