Crinkle cutter

- 4 ounces cream cheese (See Tip 1)
- 4 ounces Feta crumbles
- 2 Tablespoons olive oil
- Seedless Watermelon (See Tip 2)
Add the cream cheese, Feta crumbles, and olive oil to a bowl. Beat on high speed until smooth and creamy, about 60 seconds. Cover and refrigerate until ready to serve.
Cut half-inch slices of watermelon with a sharp knife. Then, cut the slices in half.
Using a crinkle cutter, cut the fries into half-inch pieces. (See Tip 3)
Cover and refrigerate until ready to serve.
Serve the watermelon "fries" cold with the whipped feta dip.
Yield: 8 servings.
- I used reduced-fat cream cheese in the dip, but you can use full-fat cream cheese if desired.
- You will likely have watermelon left over. Cut into pieces and refrigerate for a refreshing snack.
- If you don't have a crinkle cutter, you can use a sharp knife to cut the fries.
