Ingredients- Here’s What You’ll Need
- Sirloin Tip Steak: Cut into bite-sized pieces; it cooks relatively quickly. Just be sure to slice it against the grain for maximum tenderness.
- Yukon Gold Potatoes: Known for their creamy flesh and slightly waxy skin, this combination makes them wonderfully tender on the inside while crisping up beautifully on the outside.
- Unsalted Butter and Olive Oil: Using a combination, you get beautiful browning and caramelization from the olive oil without the risk of burning the butter’s flavor contribution.
- Garlic Powder: Don’t be tempted to use fresh garlic! It will burn!! The first time I made this, I used fresh garlic, and it was a burnt mess. Garlic powder offers a garlicky flavor without the burn.
- Herbs & Spices: Dried Oregano, Dried Rosemary, Dried Thyme, Kosher Salt, and Freshly Ground Black Pepper.
Steps to Make Quick and Easy One-Pan Steak Bites & Potatoes
- Place a large skillet, with a lid, over medium-high heat and add two tablespoons of butter and olive oil. I used my 5 qt. Le Creuset Signature Braiser, which is one of my favorite pans to cook with.
Cut the potatoes in half or quarters, depending on their size. You want them to be about the same size as the steak pieces.
- Once the butter has melted and is slightly sizzling, add the cut potatoes, then stir to coat them in the butter and oil.
- Then, add the dried oregano, dried rosemary, dried thyme, garlic powder, freshly ground black pepper, and Kosher salt.
- Stir the potatoes to evenly coat them in the herbs and spices, trying to position as many as you can with the cut side down. Then place the lid on the pan and cook for about five minutes.
- Remove the lid and give the potatoes a good stir. Replace the lid and continue cooking, stirring every five minutes, until the potatoes are fork-tender and golden brown. This should take about 20 minutes total. Remove the potatoes from the pan and place them in a bowl with an upturned plate on top to keep them warm, and set aside.
- Place the rest of the butter in the pan. Once it has melted, add the steak bites, and stir to coat in the hot butter. Let the steak bites cook in a single layer for 3 minutes without stirring.
- Give the steak bites a stir, and continue cooking, giving them a stir every 2-3 minutes, for a total cooking time of about 6-8 minutes, or until your preferred doneness. But be careful not to over cook the steak, it will become tough.
- Remove the pan from the heat. Add the potatoes and a sprinkle of fresh parsley, and stir to combine everything.
- Then, top with another sprinkle of parsley and serve with your favorite vegetables and some rolls fresh from the oven. Enjoy!

Frequently Asked Questions
Great options include sirloin, flank steak, skirt steak, or even ribeye for a more decadent choice. Consider factors like budget, cooking time, and desired flavor profile when selecting your cut.
Overcooking is the culprit for tough steak. Remove the steak from the heat a few degrees before your desired final temperature, as it will continue to cook slightly while resting. Slicing against the grain when cubing is also important for maximum tenderness.
Absolutely! This recipe is a great base for customization. Bell peppers, broccoli florets, mushrooms, asparagus, or even chopped carrots would all be delicious additions.
I don’t recommend it! The first time I made this I used freshly minced garlic and by the time the potatoes were done, the garlic had burned so badly it was such a huge mess that I ended up throwing out.
Recipe Tips and Tricks
- Temperature Matters: Take your meat out of the refrigerator 30 minutes before cooking to bring it to room temperature. This ensures even cooking throughout.
- Pat it Dry: Excess moisture on the steak surface hinders browning. Pat your steaks dry with paper towels before cutting them into bite-sized pieces.
- Cut Matters: Cut the potatoes into similar-sized pieces for uniform cooking. Aim for wedges or bite-sized pieces. The potatoes should be about the same size as the steak bites.
- Leftover Love: Leftovers can be reheated in a skillet over medium heat until warmed through. Be aware that the steak might dry out slightly upon reheating.
