    Disney-Inspired Ooey Gooey Toffee Cake

    Frequently Asked Questions

What is the dessert at Liberty Tree Tavern?

The signature dessert at Liberty Tree Tavern in Disney World's Magic Kingdom is the Ooey Gooey Toffee Cake. It features a warm cake-like base, a gooey cream cheese and toffee center, and is traditionally served family-style with vanilla ice cream, chocolate, and caramel syrups.

Can I make this Disney World Ooey Gooey Toffee Cake ahead of time?

Yes! While this cake tastes phenomenal warm out of the oven, you can easily bake it a day ahead. Store it at room temperature in an airtight container, and simply pop individual slices in the microwave for 10-15 seconds before topping with ice cream and sauces to recreate that fresh-baked restaurant experience.

Do I need to refrigerate Ooey Gooey Toffee Cake?

Because the filling contains cream cheese and eggs, leftovers should be stored in an airtight container in the refrigerator if you plan to keep them for more than 2 days. When you're ready to enjoy a slice, simply reheat it in the microwave for 10 to 15 seconds to restore that warm, gooey, straight-from-the-tavern texture.

Can I substitute the yellow cake mix base?

Absolutely. While a classic yellow cake mix provides the traditional, authentic flavor profile of the park original, you can experiment with a white cake mix, vanilla cake mix, or even a chocolate cake mix for an ultra-rich twist.

    Recipe Tips and Tricks

    • Room Temperature is Key: Ensure your cream cheese, eggs, and butter are completely at room temperature before mixing. Cold ingredients cause unappealing lumps in the smooth cream cheese layer.
    • Protect the Edges: Don't skip the crinkled aluminum foil step at the 40-minute mark. It keeps the outer cake crust beautifully golden without letting it burn while the gooey center finishes setting.
    • Bits vs. Bars: Using pre-packaged Heath Toffee Bits ensures an even, smooth melt throughout the batter, whereas crushing whole candy bars provides larger, more textural pockets of crunch.
    • Don't Over-Mix the Filling: When preparing the second layer, beat the cream cheese, butter, eggs, and powdered sugar just until smooth and combined. Over-mixing traps excess air in the batter, causing the filling to puff up like a soufflé in the oven and then deflate drastically as it cools.
