    How To Make These Easy No-Bake Pencil Cookies - Step-by-Step

    Making these tasty treats is quick and easy.

    1. I started by cutting a point at one end of the vanilla sugar wafer cookie with a sharp knife.

    1. Then, I melted the pink candy melts in a microwave-safe bowl according to the package directions. I dipped the straight end of the sugar wafer in the melted candy melts. I placed them on a piece of parchment paper to allow the candy melts to harden.
    1. Once the pink candy melts had hardened, melted the bright-white candy melts according to the package directions. Then, I dipped the pointed end of the sugar wafer into melted white candy melts.

    1. Before the white candy melts had a chance to harden, I placed a mini chocolate chip on the tip of the pointed end of the sugar wafer.

    I allowed the white candy melts to harden. That's it!

    What can be done to thin out the melted candy melts to make dipping easier?

    If your melted candy melts are too thick for dipping, add a small amount of vegetable oil. I generally add about a teaspoon. When I've thinned the candy melts with vegetable oil, however, they tend to take a bit longer to harden.

    What is the best size dish for melting the candy melts?

    I like to use a tall, narrow microwave-safe dish for melting the candy melts. The reason is that I want the melted candy melts to be deep enough to easily cover the ends of the sugar wafers.

    Can different sugar wafers be used?

    Sugar wafers come in a variety of flavors. Feel free to use your favorite variety.

    How long do these cookies last?

    If stored in an airtight container, these pencil cookies should last for several days.

    Ingredients

    • 12 store-bought vanilla sugar wafers
    • ¾ cup pink candy melts, melted according to package directions (See Tips 1 and 2)
    • ¾ cup bright-white candy melts, melted accoridng to package directions (See Tips 1 and 2)
    • 12 mini semi-sweet chocolate chips

    Instructions
     

    • Cut a point in one end of the sugar wafers.
    • Dip the uncut end of the sugar wafers in the melted pink candy melts to about ¾ of an inch to 1 inch. Place on parchment or wax paper to harden. (See Tips 3 and 4)
    • Dip the pointed end of the sugar wafers in the melted bright-white candy melts totally covering the point.
    • Before the white candy melts have hardened, place a mini chocolate chip on the tip of the pointed end. Place on parchment or wax paper to harden. (See Tips 3 and 4)
    • Store in an airtight container for up to three days.
    • Yield: 12 No-Bake Pencil Cookies.

    Tips/Notes

    1. It's best to melt the candy melts in a tall, narrow microwave-safe bowl to allow for enough depth in the melted candy melts to cover the ends of the sugar wafers.
    2. If the melted candy melts are too thick for effective dipping, add 1 to 1 ½ teaspoons of vegetable oil to thin them.
    3. If you have added vegetable oil to thin the candy melts, the candy melts will take longer to harden.
    4. You will have leftover melted candy melts. Feel free, however, to add more sugar wafers to the recipe.
