    1. Drain the potatoes thoroughly in a colander. Line a half sheet pan with paper towels and place a cooling rack inside the prepared pan. Then spread the potatoes out on the rack and let them cool completely to room temperature.

    1. In a large mixing bowl, whisk together the sour cream, mayonnaise, the package of dry ranch dressing mix, and freshly ground black pepper until smooth and well combined.

    Ingredients

    • 1 lb Bacon cooked and crumbled; 2 TBS reserved
    • 3 lbs Red Potatoes cleaned and cut into 1-inch pieces
    • 1 ½ TBS Kosher Salt
    • 1 c Mayonnaise
    • 1 c Sour Cream
    • 1 oz Package Ranch Dressing Mix
    • ½ teaspoon Salt and freshly ground black pepper to taste
    • 8 oz Sharp Cheddar Cheese finely shredded; 2 TBS reserved
    • ⅓ c Green Onions sliced; 1 TBS reserved

    Instructions
     

    • Cook the bacon following my Easy No-Mess Crispy Oven-Baked Bacon recipe. Crumble the bacon, finely shred the cheese, and slice the green onions; set all aside until ready to use.
