Mark the center of the tortilla
Starting in the center, make a single cut in the tortilla to the edge.
Place Pico de Gallo, scrambled eggs, bacon, crispy crowns and cheese on Tortilla.
Fold Pico de Gallo layer over scrambled eggs, then over crispy crowns and finally over cheese.
Brush with olive oil; cook over medium heat until golden brown on both sides.
Transfer to cutting board; cut in half.
