    Tortilla Pizza

    Tortilla Pizza with its thin and crispy crust has all of the great taste of homemade pizza but without the fuss. It's the perfect size for an individual serving and takes less than 15 minutes to make from start to finish. I tend to like my tortilla pizza plain - with just pizza sauce and cheese. However, like any pizza, tortilla pizza can be dressed up or down to suit your every tastes.

    If you're a fan of thick crust pizza, you probably won't like this tortilla pizza. The reason is that the crust is amazingly thin and crispy. This lets the sauce and cheeses shine through without getting bogged down in a doughy crust.

    Making the Pizza Sauce

    You can definitely use a store-bought pizza sauce for this tortilla pizza. However, I prefer to make my own. The reasons are it (1) takes minutes to make with the food processor doing the work; and (2) is so much better than any store-bought pizza sauce that I've tried.

    The ingredients are simple: Canned whole tomatoes, garlic, olive oil, white wine vinegar, oregano, salt and pepper.

    After draining the canned tomatoes, I added them to the food processor fitted with a steel blade along with the other ingredients. Then, I processed the ingredients for 30 seconds, or until the pizza sauce was smooth. It's that simple!

    For this simple pizza, I used an 8-inch flour tortilla, olive oil, pizza sauce, freshly grated Parmesan cheese, shredded mozzarella cheese and dried oregano.

    Making the Tortilla Pizza

    I like to make my tortilla pizza in a cast iron skillet. For this, I used my 10-inch cast iron skillet.

    I started by placing the tortilla in my cast iron skillet over medium heat. Then, I brushed both sides of the tortilla with some olive oil (Photo 1).

    After that, I browned both sides of the tortilla (Photo 2). This took about 2 minutes per side.

    Once both sides of the tortilla were browned, I topped the tortilla with pizza sauce, grated Parmesan cheese and shredded mozzarella cheese.

    I popped the pan with the pizza into a preheated 425°F oven for 7 or 8 minutes until the cheeses were melted and golden brown. 

    I removed the pan from the oven and transferred the pizza to a cutting board. Then, I drizzled the top with some olive oil and sprinkled on some dried oregano. 

    I cut the pizza into four slices and waited for the moment of truth. Was the tortilla pizza as good as it looked?

    The answer - a huge yes! The crust was ultra thin and amazingly crispy. The combination of the pizza sauce and cheeses sitting on top of the thin crust was perfect. Yum!

    Chula's Expert Tips

    • You can use store-bought pizza sauce in this recipe instead of making your own. However the homemade pizza sauce featured here is amazing and so simple to make. Also, it can be refrigerated for up to a week or frozen for up to a month. ! I would not recommend using marinara sauce in place of the pizza sauce. Your pizza will taste like spaghetti sauce!
    • Not all flour tortillas are the same. Some are thicker than others. Try to find the thinnest flour tortilla possible. The thicker the tortilla, the less crispy the finished pizza. I used the Mission soft flour tortillas in this recipe.
    • If while the tortilla is browning, bubbles appear on the top, use a fork to deflate them.
    • Avoid using pre-shredded mozzarella cheese. It's coated with cellulose that impacts not only the flavor but also the melting ability. Therefore, go the extra step and shred your own. Also, try to use whole milk mozzarella cheese.
    • You can dress up this awesome pizza by adding some pepperoni, Italian sausage, onions and peppers, mushrooms, etc.

    Ingredients

    Homemade Pizza Sauce (See Tip 1)

    • 1 (28-ounce, 794 grams) can whole peeled tomatoes, drained
    • 2 cloves garlic minced
    • 1 Tablespoon olive oil
    • 1 teaspoon red or white wine vinegar
    • 1 teaspoon dried oregano
    • Salt and freshly ground black pepper to taste

    Tortilla Pizza

    • 8 inch flour tortilla (See Tip 2)
    • ½ tablespoon olive oil, divided
    • 3 Tablespoons pizza sauce
    • 1 ½ Tablespoons grated Parmesan cheese
    • ½ cup (2 ounces, 57 grams) shredded mozzarella cheese (See Tip 3)
    • ⅛ teaspoon dried oregano

    Instructions
     

    Homemade Pizza Sauce

    • Place drained tomatoes in bowl of food processor fitted with steel blade. Add garlic, olive oil, vinegar, and oregano; process until smooth, about 30 seconds. Season to taste with salt and freshly ground black pepper. (See Tip 4)Yield: 2 cups.

    Tortilla Pizza

    • Preheat oven to 425° F.
    • Place tortilla in cast iron skillet set over medium heat. Brush both sides with olive oil, reserving ⅛ teaspoon for drizzling on finished pizza. Heat both sides until golden brown, 2 to 3 minutes per side.
    • Top tortilla with pizza sauce, Parmesan cheese and mozzarella cheese. Transfer skillet to preheated oven; bake until the edge of the pizza is golden brown and the cheese is melted, 7 to 8 minutes.
    • Remove skillet from oven; transfer pizza to cutting board. Drizzle reserved olive oil over the top and sprinkle with dried oregano. Cut into 4 wedges and serve.
    • Yield: 1 8-inch trotilla pizza.

    Tips/Notes

    1. You can use store-bought pizza sauce instead of making your own. However the homemade pizza sauce is amazing! Don't use marinara sauce in place of the pizza sauce. It won't taste the same.
