Steps to Make Pumpkin Patch Dirt Cups
- Crush the entire package of Oreos in the food processor. Set the crumbs aside until ready to use.
- Place the sweetened coconut flakes in a plastic container with a lid and add a drop or two of green gel food coloring. Place the lid on the container and shake it to turn the coconut green. Add another drop or two, shaking well after each addition, until the desired shade of green is reached. Set the coconut aside until ready to use.
- Place 12 ounces of room-temperature cream cheese in a large bowl and beat with an electric hand mixer for a few seconds. Then, add the powdered sugar, about a cup at a time, beating well after each addition until all of the powdered sugar has been added.
- Next, add about half of the Cool Whip and beat well. Then add the rest and beat well until the mixture is smooth and creamy.
- Add several drops of orange gel food coloring and beat well. Then, add some more food coloring, beating well after each addition until the desired color has been reached. Place the bowl in the refrigerator while preparing the pudding mixture.
- To make the pudding, place two boxes of chocolate instant pudding in a large bowl and add six cups of heavy whipping cream.
- Beat with an electric hand mixer for about two minutes, or until well combined and stiff peaks form. It should be well mixed when there are no visible brown flecks. Also, it will not have the consistency of regular pudding. Place the bowl in the refrigerator until you are ready to use it.
- To build the Pumpkin Patch Dirt Cups, place one tablespoon of Oreo crumbs into the bottom of eighteen 9-ounce clear plastic Solo cups.
- Using a 1.5-ounce ice cream scoop, evenly distribute the orange cream cheese mixture among the cups. (This should be about three tablespoons per cup.) Then, smooth out the orange mixture so that it’s level.
- Next, sprinkle another tablespoon of Oreo crumbs over the orange mixture, making sure to cover the entire surface of the orange mixture.
- Using a 2-ounce ice cream scoop, evenly distribute the chocolate pudding mixture among the cups. Then, smooth out the pudding so that it’s level.
- Add one more tablespoon of Oreo crumbs on top of the chocolate pudding, making sure to cover the entire surface of the pudding.
- Place three Mello Creme Pumpkins on top of each cup, pressing them slightly into the crumbs. Then, sprinkle with a pinch or two of green coconut. Cover the cups with plastic wrap (I recommend using Glad Press ‘N Seal Wrap), and store them in the refrigerator.
