    Southern Fried Chicken Salad with Honey Mustard

    Southern Fried Chicken Salad is the perfect blend of fresh vegetables, crispy fried chicken strips, hard cooked eggs and shredded cheese topped with yummy honey mustard dressing. It's the ultimate in southern comfort that will have you coming back for more.

    Of all the salads out there, this salad is my absolute favorite. Often it is the my choice from luncheon menus on the rare occasion that I actually go out to eat for lunch. 

    Here's How I Made The Honey Mustard Dressing

    The ingredients for the Honey Mustard Dressing are pretty basic. I used mayonnaise, honey, yellow mustard and fresh lemon juice.

    To make the honey mustard dressing, I whisked together the mayonnaise, honey, mustard and lemon juice. Then, I refrigerated the dressing until I was ready to use it.

    It's that easy!

    Here's How What I Used To Make the Salad

    I had some leftover Southern Fried Chicken Strips in the refrigerator along with Honey Mustard Dressing. I also had some romaine lettuce, little grape tomatoes and shredded cheese.

    All that I needed was a hard boiled egg to make this amazing salad. If you've ever wondered, here's how to make the perfect hard boiled egg!

    Here's How I Made the Salad

    Making the salad was a piece of cake.

    1. I started with a bowl of romaine lettuce and added a sliced hard boiled egg.

    1. Next, I added some sliced grape tomatoes.

    1. After that, I added the fried chicken strip that I had cut into bite-sized pieces.

    I finished the salad with a drizzle of my homemade Honey Mustard Dressing.

    The Southern Fried Chicken Salad was restaurant quality, rivaling any salad that I had ordered at a restaurant. Yum!

    Frequently Asked Questions

    Can Dijon mustard be used for the Honey Mustard Dressing?

    Feel free to substitute Dijon mustard for the yellow mustard when making the Honey Mustard Dressing

    Is there a substitute for the grape tomatoes?

    You can actually use any tomatoes you desire in this Southern Fried Chicken Salad. I like the appearance of the grape tomatoes, but any small tomato will work. Alternatively you can use a diced tomato.

    Can iceberg lettuce be substituted for the Romaine lettuce?

    If you prefer, you can definitely use iceberg lettuce, or really any lettuce of your choosing.

    Can store-bought fried chicken strips be used in this recipe?

    Store-bought fried chicken strips work perfectly in this recipe.

    What other dressings work well with this salad?

    I personally really like Honey Mustard Dressing. However, feel free to use the dressing of your choice.

    Ingredients

    Salad

    • 2 ½ cups torn Romaine lettuce (See Tip 1)
    • 1 hard boiled egg, sliced
    • 7 or 8 grape tomatoes, sliced (See Tip 2)
    • 1 fried chicken strip, sliced (See Tip 3)
    • ¼ cup (1-ounce) shredded cheddar cheese
    • Honey Mustard Dressing (See Tip 4)

    Honey Mustard Dressing

    • ½ cup (4-ounces) mayonnaise
    • 2 Tablespoons (1.5-ounces) honey
    • 1 ½ Tablespoons (0.75-ounces) yellow mustard (See Tip 5)
    • 1 Tablespoon (0.5 ounces) fresh lemon juice

    Instructions
     

    Salad

    • Place Romaine lettuce into chilled bowl. Top with egg, tomatoes, chicken strip and shredded cheese. Drizzle with Honey Mustard dressing.
    • Yield: 1 Salad

    Honey Mustard Dressing

    • Whisk together all ingredients. Cover and refrigerate. (See Tip 6)
    • Yield: About ¾ cup.

    1. Feel free to substitute the lettuce of your choice in this salad.
    2. Use whatever tomatoes you desire in this salad.
    3. Either homemade or store-bought fried chicken strips are perfect in this recipe.
    4. Honey Mustard is my favorite dressing to use on this salad. However, use whatever dressing you prefer.
    5. Dijon mustard is a perfect substitute for yellow mustard. It's a matter of taste.
    6. If necessary add a bit more lemon juice to the dressing to reach desired consistency.

      I’m obsessed with this salad. The dressing is so good. Sometimes my husband and I just make the chicken tenders and the honey mustard if we aren’t in the mood for a salad.
