    1. Cube the room-temperature cream cheese and place it in a small food processor, then add the shredded Unexpected Cheddar cheese.

If the cheese has oozed out of the sandwiches, immediately and carefully pull the pieces of bread apart, and using a knife, scrape the cheese off the parchment and transfer it back to the sandwich.     Ingredients

    For the Cream Cheese Spread

    • 4 oz Cream Cheese room temperature
    • 2 oz Trader Joe's Unexpected Cheddar Cheese, shredded see notes
    • 2 tbs Heavy Whipping Cream
    • ¼ teaspoon Kosher Salt

    For Garlic-Mayo Spread

    • ½ c Mayonnaise
    • 3 cloves Garlic minced
    • ¼ teaspoon Kosher Salt

    For the Grilled Three-Cheese Sandwich

    • 8 slices Artisan White Bread
    • 8 slices Provolone Cheese
    • 8 slices Cheddar Cheese

    Instructions
     

    To Make Cream Cheese Spread

    • Cube the room-temperature cream cheese and place it in a small food processor. Then add the shredded Unexpected Cheddar cheese, heavy whipping cream, and ¼ teaspoon kosher salt. Place the lid on the food processor and blend until smooth. Set said until ready to use.

    To Make the Garlic-Mayo Spread

    • Place the mayonnaise in a small bowl. Add the minced garlic and ¼ teaspoon Kosher salt. Then, use an electric hand mixer to combine.

    To Make the Grilled Three-Cheese Sandwiches

    The original recipe calls for Double Gloucester, but that is difficult to find. I substituted it for Trader Joe's Unexpected Cheddar Cheese. If you can't find that, you can use regular cheddar cheese.
