Steps to Make Bacon Cheeseburger Sliders

    1. Cook bacon using my Easy No-Mess Crispy Oven Baked Bacon recipe. Turn the oven broiler on to high. Line a half sheet pan with parchment paper, a quarter sheet pan with non-stick aluminum foil, a quarter sheet pan with paper towels, and a quarter sheet pan with parchment paper.

    1. Cut the slider buns in half horizontally, making sure to keep the slabs intact, and place each half on the prepared pan, cut side up. Melt two tablespoons of butter in the microwave, then brush the melted butter over the tops of each slab. Broil in the oven for 30-90 seconds until lightly toasted. Keep an eye on them, they can burn quickly. Set aside until ready to build the sliders.

    1. Preheat the oven to 350°F. Transfer the ground beef to a large bowl. Add garlic powder, onion powder, black pepper, and Kosher salt. Put on a pair of vinyl gloves and use your hands to mix the spices into the meat.
placing meat and spices in bowl
    1. Transfer the meat mixture to the white tray that the slider buns came in and press the meat into an even layer.

    1. Then, lower the sides of the tray and press the meat out so it goes about half an inch past each side. You should do this because the meat will shrink while baking. By making the raw meat slab a little larger than the buns, once it's finished baking, it should be the same size as the buns.

    1. Flip the shaped meat onto the foil-lined sheet pan and peel the slider tray away from the meat. Bake for 15-20 minutes in a 350°F oven.

    1. After the meat has baked, use two large spatula turned to transfer the meat to the paper towel-lined sheet pan. Cover the meat with more paper towels to soak up the grease.

    Frequently Asked Questions

Can I make bacon cheeseburger sliders ahead of time?

Yes, you can easily prep these sliders ahead of time to save minutes on game day or busy weeknights. Cook the ground beef filling and the bacon, and mix the burger sauce up to 24 hours in advance, storing them in airtight containers in the refrigerator. Allow the cooked meat and bacon to come to room temperature for about 30 minutes before assembling the sliders. Then, assemble the sliders just before baking, adding a few extra minutes to the oven time if the meat mixture is cold.

How do I keep the bottom of the slider buns from getting soggy?

To prevent soggy slider buns, ensure you drain the cooked ground beef thoroughly on a paper-towel-lined sheet pan to remove excess grease before assembly. Additionally, placing a layer of cheese directly onto the bottom bun before adding the meat creates a barrier that shields the bread from residual moisture and juices.

What is the best cheese to use for bacon cheeseburger sliders?

For the ultimate melt and flavor, I like American cheese. However, sharp cheddar, Colby Jack, or even pepper Jack are also excellent choices for bacon cheeseburger sliders. For the best structural results and a smoother melt, use slices. You can use freshly shredded cheese from a block if you prefer. I do not recommend using pre-packaged bagged cheese, which contains anti-caking agents that prevent a cohesive melt.

What is the best way to reheat leftover sliders?

The best way to reheat leftover sliders without drying them out or making them rubbery is in the oven or air fryer. Place the sliders in a baking dish, cover loosely with aluminum foil to protect the tops from burning, and bake at 350°F (175°C) for about 10 to 12 minutes until the center filling is hot and the cheese is remelted.

    Recipe Tips and Tricks

    • Freeze Leftovers Seamlessly: Wrap cooled, baked sliders tightly in heavy-duty aluminum foil, place them in a freezer-safe bag, and freeze for up to 3 months. Thaw overnight in the refrigerator before reheating.
    • Swap the Protein Easily: Ground turkey, ground chicken, or plant-based alternatives work beautifully as a direct substitute for ground beef. If using lean poultry, toss in a splash of Worcestershire sauce to keep the filling juicy.
    • Keep Buns Intact During Assembly: When slicing your slab of slider rolls horizontally, keep the top and bottom sections completely intact as solid sheets rather than separating the individual rolls. This makes layering the ingredients fast and uniform, and ensures a cleaner slice after baking.
    • Control the Beef Grind and Fat Ratio: Opt for an 93% lean ground beef. Leaner blends shrink less during the cooking process, ensuring that the meat patty will be the same size as the slider bun slab when finished baking.
