If you’re looking for a perfect appetizer for your Mardi Gras themed party, look no further. Cajun Sausage Bites with Spicy Dipping Sauce are super easy to make, and are kicked up a notch to satisfy your cravings. Bet you can’t eat just one!
They are sort of like the ever popular pigs in a blanket. However, rather than using little smokies, I use Andouille sausage. What really takes these little morsels over the top, is the amazing dipping sauce. These are so easy to make and are the first to disappear!
Ingredients for Cajun Sausage Bites with Spicy Dipping Sauce:
These delicious appetizers only use a handful of ingredients.
- Cajun Sausage Bites – Andouille sausage cut into bite-sized pieces and refrigerated original crescent roll dough.
- Spicy Dipping Sauce – Mayonnaise flavored with ketchup and Creole mustard, kicked up a notch with Cajun Seasoning and minced parsley for color. What could be easier?
Making the Spicy Dipping Sauce
First, I made the spicy dipping sauce by combining the mayonnaise, mustard (Photo 1), ketchup (Photo 2), Cajun/Creole seasoning (Photo 3), and minced parsley (Photo 4) in a small bowl. Then, I refrigerated the sauce while I made the sausage bites.
Making the Cajun Sausage Bites:
The reason that I made these tasty morsels was that I had some store-bought crescent dough and Andouille sausage that needed to be used. I thought – what better way to use these two ingredients than to make these delicious sausage bites!
First, I unrolled the crescent dough, on a lightly floured surface. Then, I cut each triangle of the crescent roll dough into 3 smaller triangles using a pizza cutter (Photo 5).
I placed the sausage pieces on the wide end of the crescent dough triangle, and rolled it up (Photo 6). I placed each sausage bite on a parchment lined baking sheet. When I had made all of the sausage bites, I brushed them with an egg wash (Photo 7).
I popped the Cajun Sausage Bites into a preheated 350° F oven for about 15 minutes until they were golden brown. When I removed them from the oven, I transferred the sausage bites to a paper towel lined plate. The reason for the paper towels was to absorb any residual grease from the sausage.
After letting the Cajun Sausage Bites cool for about 5 minutes, I served them with the Spicy Dipping Sauce.
The Cajun Sausage Bites with Spicy Dipping Sauce had just the right amount of bite to them. They were amazing! Laissez les bons temps rouler – Yum!

- You could also use little smokies for this along with the spicy dipping sauce – Yummy!
- The Cajun Sausage Bites, minus the egg wash, can be made ahead of time. Cover them to prevent drying out and refrigerate. When ready to cook, remove from refrigerator, brush with egg wash and cook as directed above.

Cajun Sausage Bites with Spicy Dipping Sauce
Ingredients
Spicy Dipping Sauce
- ½ cup mayonnaise
- 1 Tablespoon Creole mustard
- 1 Tablespoon ketchup
- 1 teaspoon Cajun/Creole seasoning
- 1 teaspoon fresh parsley, finely minced
Cajun Sausage Bites
- 1 8-ounce can Pillsbury Original Crescent Roll dough
- 12 ounce package Andouille sausage, cut into 1-inch pieces (See Tip 1)
- 1 egg plus 1 Tablespoon water for egg wash
Instructions
Spicy Dipping Sauce
- Spicy Dipping Sauce: Combine mayonnaise, mustard, ketchup, Cajun/Creole seasoning, and parsley in a small bowl. Refrigerate until ready to use.
Cajun Sausage Bites
- Preheat oven to 350° F. Line a rimmed baking sheet with parchment paper; set aside.
- Unroll crescent roll dough on a lightly floured surface. Cut each triangle of crescent roll dough into 3 smaller triangles. Place sausage on wide end of crescent dough triangle and roll until fully wrapped, exposing the cut ends. Place on prepared baking sheet; brush lightly with egg wash. (See Tip 2)
- Bake at 350° F until golden brown, about 15 minutes. Transfer to paper towel lined plate. Allow to cool 5 minutes.
- Serve warm with Spicy Dipping Sauce.
- Yield: 24 Cajun Sausage Bites with Spicy Dipping Sauce.

We doubled this recipe to feed a Mardi Gras Murder Mystery Party, and they were easy to prepare and very tasty. I did not get to eat any of them the first time that I prepared them because I was part of the cast, so I made them again. They are delicious. If you want to use another sausage other than Andouille, the recipe should work just fine. The dipping sauce is a perfect complement to the flavor of the sausage.

Can you make the bites ahead of time and then bake before serving?
Absolutely Janet! You could make the bites earlier in the day, cover them so they don’t dry out and put them in the refrigerator. Crescent roll dough always does better when it’s put in the oven cold. Hope you enjoy them!
