How to Make Garlic Parmesan Green Beans
- Preheat the Oven and Sheet Pan: Preheat the oven to 425°F. Line a half-sheet pan with nonstick aluminum foil. Place the sheet pan in the oven while it preheats. A hot pan helps the green beans blister instead of steaming.
- Trim and Dry the Green Beans: Keep the green beans whole, and trim only the stem ends. Leave the pointed tails for a more polished look. Wash and try thoroughly.
- Toss with Olive Oil and Seasonings: In a large bowl, toss the green beans with olive oil, salt, and pepper, using tongs to lift and turn until evenly coated.

- Roast the Green Beans: Carefully spread the beans in a single layer on the hot sheet pan. Roast for 10 to 15 minutes, until the beans are nearly tender and the edges begin to wrinkle or blister.

- Add the Garlic: Toss the minced garlic in 1 ½ teaspoons of olive oil. Remove the baking sheet from the oven and sprinkle the garlic evenly over the beans. Toss quickly. Return the pan to the oven for another 5 minutes until the garlic is fragrant and the beans are fully tender.

- Finish with Parmesan Cheese: Remove the beans from the oven and immediately sprinkle freshly grated Parmesan cheese over the hot beans. Toss lightly to coat, allowing the Parmesan cheese to melt on the beans.

Garlic Parmesan Roasted Green Beans are proof that a simple side dish can feel elevated with just a few technique-driven choices.
By roasting at a high heat, adding garlic at the right moment, and finishing with Parmesan cheese that melts on the hot beans, you get a dish that's both visually appealing and full of flavor. These beans are perfect alongside a rich main dish like brisket. Yum!

Chula's Test Kitchen Tips
- It's important to dry the beans thoroughly. Moisture prevents proper blistering.
- By using a hot sheet pan at the beginning, you get a jump start on the roasting
- Adding the garlic late, prevents bitterness.
- Using tongs as opposed to a spatula to toss the green beans provides better control and presentation.
- Freshly grated Parmesan cheese is best. It melts and clings better than pre-shredded Parmesan cheese.
Frequently Asked Questions
Fresh green beans work best. The reason is that frozen beans release moisture and won't blister properly.
Garlic burns quickly at high heat. Adding it near the end of roasting gives the strong garlic flavor without bitterness that results from overcooking.
When done, the beans should be tender when bitten, slightly wrinkled or blistered, but still bright green.
Because of their high moisture content, these roasted beans will not be as crisp as French fries.
The Garlic Parmesan Roasted Green Beans are best served fresh from the oven. However, you can trim the beans in advance. If needed they can be reheated briefly in a hot oven.
Sprinkle the beans with cooked, crumbled bacon before serving. Also, feel free to add red pepper flakes for heat, or toss with toasted almonds for a nutty crunch. To brighten the flavor, consider adding a squeeze of fresh lemon juice.
