    1. Gently wash the berries and place on layers of paper towels to dry. Cut the tops off the strawberries, then cut them into slices, and place the slices on paper towels to absorb the excess moisture. Place the vanilla Greek yogurt, honey, and vanilla extract in a medium-sized bowl.

    1. Then, use an electric hand mixer to combine. Cover the bowl and chill in the refrigerator for an hour or so.

    1. To build the parfaits, start by adding ¼ cup of granola to the bottom of a mini trifle bowl. If yo udon't have mini trifle bowls, you can use any 16 oz glasses of your choosing.
