    1. I started by adding the cottage cheese, Nutella, honey, unsweetened cocoa, milk, and Godiva Chocolate Liqueur to the food processor with a steel blade.

    1. I secured the top and pulsed the mixture five times to combine the ingredients. Then, I scraped down the sides of the food processor.

    1. Next, I returned to top and processed the gelato mixture for about 30 seconds until it was smooth and creamy.

    1. I poured the gelato mixture into a measuring cup. I covered the measuring cup with plastic wrap and refrigerated the mixture for about 4 hours to allow it to reach a temperature of about 40°F.

    1. Once the gelato mixture reached around 40°F, I poured it into the ice cream maker, which was running.

    1. I allowed the ice cream maker to churn away until the mixture was frozen. This took about 12 minutes with my ice cream maker.
    1. I transferred the cottage cheese gelato to a freezer-safe container and smoothed the mixture. I covered the container and placed the gelato in the freezer for about 4 hours to firm it up.

    1. Before serving the gelato, I removed it from the freezer and let it sit for around 15 minutes. Straight from the freezer, the gelato was quite hard and needed a bit of softening to make it scoopable.

    • 16 ounces 4% Cottage Cheese
    • ¾ cup (7.8 ounces, 222 grams) Nutella
    • ¼ cup (3 ounces, 85 grams) honey
    • ¼ cup (0.75 ounces, 21 grams) unsweetened cocoa
    • 1 cup (8 ounces) whole milk
    • 2 Tablespoons (1 ounce) Godiva Chocolate Liqueur (See Tip 1)

    Instructions
     

    • Add cottage cheese, Nutella, honey, unsweetened cocoa, milk and Godiva Chocolate Liqueur to a food processor with a steel blade. (See Tip 2)
    • Pulse five times to incorporate the ingredients. Scrape down the sides and process for 30 seconds or until smooth and creamy.
    • Transfer to a 4-cup measuring cup. Cover with plastic wrap and refrigerate until the mixture reaches 40°F or lower.
    • With the ice cream machine running, add the gelato mixture. Process according to manufacturer's instructions. (See Tip 3)
    • Transfer to a freezer-safe container. Cover and freeze for at least four hours.
    • Yield: 1 quart. (See Tip 4)

    1. The Godiva Chocolate Liqueur adds flavor and helps minimize icy formation. You can substitute another liqueur, vodka, or vanilla extract. If using vanilla extract, reduce the amount to one tablespoon.
    2. May use a blender instead of a food processor.
    3. You can make this delicious gelato without an ice cream machine. Once the gelato mixture is prepared, simply transfer it to a freezer-safe container, cover it, and freeze it until it reaches the desired consistency.
    4. Remove the gelato from the freezer for 15 minutes or more before serving to allow it to soften enough to be scoopable.
