    White Queso Dip

    White Queso Dip is like the queso cheese dip served at your favorite Mexican restaurant, only better. This super simple dip takes only minutes to make and and is amazingly versatile. You are going to love this super simple restaurant quality Mexican white sauce.

    Ingredients for White Queso Dip

    Queso translated is cheese, so you shouldn't be surprised that the star of the show is cheese -  specifically White American cheese. Wondering where you can get White American cheese? I buy it in the deli section of my grocery store. I generally get it sliced to save time with its melting. It makes amazing Queso dip.

     

    I like to add just enough half & half to the melting cheese to achieve the perfect dipping consistency and then load the Queso with green chiles and spices.

    Making the White Queso

    While you could make this White Queso Dip in the microwave, I prefer to use a double boiler. The reason is that if the cheese gets too hot, it can separate into a greasy mess.

    Therefore, I placed the cheese in my double boiler set over simmering water and added about ¼ cup of the half & half. I gave the mixture a stir and placed the lid on the double boiler. I let the covered cheese mixture sit for about 5 minutes.

    After 5 minutes, I uncovered the double boiler and gave the mixture a stir. The cheese had was almost melted.

    I added another ½ cup of the half & half to the cheese mixture to achieve the proper dipping consistency. Then, I added the drained green chiles, cumin and chili powder. I gave the mixture a stir to ensure that the cheese was fully melted, all of the ingredients were nicely combined and the dipping consistency was perfect.

    The White Queso Dip was delicious!. I served it warm with Tostidos Scoops. Yum!

    Chula's Expert Tips

    • You can purchase White American cheese in the deli section of your grocery store. 
    • As you are adding Half & Half to the melted cheese, stir to combine until the dip reaches the desired dipping consistency.
    • After making the dip, you can transfer it to a slow cooker set on warm, smooth and creamy for an extended period of time.
    • Leftovers can be stored, covered in the refrigerator for 3 to 4 days. It reheats beautifully in the microwave. You may need to add a small amount of milk to the dip to help achieve the desired consistency.
    • One thing that I like to do with leftovers is to add ¼ to ½ cup of chunky salsa. This makes amazing leftover Queso dip.

    Ingredients

    • 1 pound (16 ounces) White American Cheese (See Tip 1)
    • ¾ cup (6 ounces) Half & Half, divided (See Tip 2)
    • 4 ounce can diced green chiles, drained
    • ½ teaspoon dried cumin
    • ⅛ teaspoon chili powder

    Instructions
     

    • Cut cheese into 1-inch pieces. Place in double boiler over simmering water. Add ¼ cup of Half & Half. Stir to combine. Cover double boiler with lid. Let heat for 5 to 7 minutes or until cheese is almost melted.
    • Remove the lid. Add remaining ½ cup of Half & Half, stir until cheese is fully melted and mixture is well combined. Add green chiles, cumin and chili powder; stir to combine.
    • Serve warm with tortilla chips.
    • Yield: 8 servings. (See Tips 3 and 4)

      Could I use heavy cream instead of half n half?

        Skye,

        I've not used heavy cream in this recipe. However, I don't see any reason that using heavy cream would be a problem.

        Let me know if you decide to make the recipe with heavy cream. I'd love to know how it turned out.
