    Classic Egg Salad

    What to do with leftover Easter eggs? Why not make a classic egg salad? This recipe is easy to make and takes minutes to put together. I like to serve my egg salad on my homemade slider buns, but you could certainly use bread to make sandwiches or crackers for a tasty appetizer.

    Ingredients: What Goes Into This Recipe

    This is a basic recipe for egg salad. It contains hard-cooked eggs, chopped celery, chopped scallions, mayonnaise, prepared yellow mustard, freshly squeezed lemon juice, salt, and freshly ground black pepper.

    How to Make the Perfect Hard-Cooked Eggs

    Traditionally, one boils eggs in water to produce hard-cooked eggs. However, I learned some years ago that the secret to perfect hard-cooked eggs is to steam them.

    One reason is that steaming produces a more consistent and precisely cooked egg. A more significant reason is that steamed hard-cooked eggs peel perfectly with no gizmos.

    I started by placing my steamer basket into a pan. Then, I added just enough water so that it didn’t quite touch the bottom of the basket. I covered the pan and brought the water to a boil over high heat. Next, I uncovered the pan and carefully placed the eggs straight from the refrigerator in the steamer basket.

    I covered the pan with the eggs, lowered the heat to medium, and steamed the eggs for 12 minutes.

    After 12 minutes, I ran the eggs under cold water so that I could handle them.

    Then, I peeled the eggs and cut them in half. The eggs peeled beautifully, and the yolks were perfectly cooked.

    Here’s How I Made this Recipe

    1. I started by roughly chopping the egg whites and placing them in a bowl.
    1. Then, I took the egg yolks and rubbed them between my hands to break them up.
    1. After that, I added the celery, onion, mayonnaise, mustard, salt, and pepper to the eggs and stirred the ingredients together.

    1. Finally, I used a potato masher to mix all of the ingredients together for the desired consistency.

    I cut the slider buns in half, placed some Romaine lettuce on the bottom, and loaded up the egg salad.

    The sliders were a perfect size, and the egg salad was absolutely delicious. Yum!

    Recipe FAQ

    Can onions be omitted from this recipe?

    Feel free to omit the green onions from this recipe. You might, however, think about substituting some dill pickle relish for the green onions. The pickle relish is a different flavor but nicely complements the flavor of the other ingredients.

    What can be served with an egg salad sandwich?

    There are a lot of things that go well with egg salad sandwiches. Examples include potato chips, french fries, a green salad, a fruit salad, or coleslaw.

    How long will egg salad last in the refrigerator?

    Egg salad should be safe to eat within four days if it is stored in a sealed container in the refrigerator.

    Recipe Tips and Tricks

    • A key to making a simple egg salad is having eggs that peel easily. In addition to steaming the eggs as described above, you might consider getting a microwave egg boiler or a Dash Rapid Egg Cooker. Both steam the eggs.
    • It’s likely that you have read about or tried different techniques to peel eggs easily. I know that through the years, I tried different techniques. However, I’ve learned that steaming the eggs is all that is required. For example, you really don’t need to plunge the eggs into ice water unless you want to stop the cooking. Also, I’ve not detected any difference between using very fresh eggs versus older eggs.
    • Sometimes, I will add sweet or dill relish to the egg salad mixture. Both produce an excellent taste.

    Classic Egg Salad

    Classic Egg Salad is simple to make and takes minutes to put together. I like to serve my egg salad on slider buns. However, this delicious egg salad works well on regular bread for sandwiches or on crackers as an appetizer.

    Ingredients

    • 6 hard-cooked large eggs, peeled (See Tip 1)
    • ⅓ cup chopped celery, 2 to 3 small stalks
    • ¼ cup chopped scallions, 2 scallions, white and light green part
    • ¼ cup (2 ounces) mayonnaise
    • 1 teaspoon prepared yellow mustard (See Tip 2)
    • ½ teaspoon freshly squeezed lemon juice
    • Salt and freshly ground black pepper to taste
    • 12 Slider buns
    • Lettuce

    Instructions

    • Cut eggs in half; remove the yolks, and coarsely chop egg whites. Place egg whites in bowl; crumble egg yolks between hands over egg whites. Add remaining ingredients. Stir with wooden spoon to combine all ingredients. Use potato masher to achieve desired consistency.
    • Cut slider buns in half. Place piece of lettuce on bottom side. Spoon on egg salad. Place top of bun on top of egg salad. Secure with pick. Serve immediately.
    • Yield: 12 sliders.

    Chula’s Expert Tips

    1. For perfect hard-cooked eggs, steam them. Add a steamer basket to the pan with a lid. Add water just below the steamer basket. Cover the pan, and bring to a boil. Uncover the pan and place the eggs in the steamer basket. Cover, reduce heat to medium, and steam eggs for 12 minutes. Remove from steamer basket; run under cold water until cool enough to handle.
    2. May substitute Dijon mustard for the yellow mustard.
